No, never put the legs down.
A, don't need to and
B, when wild camping we try to be really inconspicuous as if we're only parked up.
I use lumps and bumps in the terrain to level the truck and occasionally rocks or tree branches if we are too wonky. Without the stability of the legs I don't feel we move around that much (unless I'm up on the roof) despite the Land Rover having much more compliant coil suspension than the more normal leaf springs.
Looking back on my six years of demountable motorhoming not once have I put the legs down unless I'm taking the camper off the truck (even though its so easy with my electronic happijacks).
