Camper cooking

With limited cooking facilities in the camper we tend to cook th same old stuff.

Do you have any recipes to share that you cook in the camper.

I'm just experimenting with a Codd bbq/oven and so far have been very impressed.

We're off in 6 weeks for a week which will be our longest trip so am after some ideas

Chorizo & Broccoli Pasta


Ingredients

150 - 200g Pasta (Fusilli/Penne)
100 – 150g Good Chorizo (We use half a Goika from Waitrose)
1 – 2 Good Size Broccoli Heads – Cut into even bite-size florets
1 – 3 Cloves Garlic
1 Large Red Onion
½ - 1 Ramiro Pepper – Optional
½ Tube Sun Dried Tomato Puree
1 – 2 Teaspoons Easy Chillies (Jar)
Glass of Vermouth – Dry or Sweet to suit your taste
Olive Oil
Pine Nuts – Toasted

Method

Dice the chorizo and fry in a little olive oil to release flavours and colours.
Finely chop onion and chop pepper and fry gently.
Crush garlic and fry gently.
Add puree, chillies, vermouth and a good glug of olive oil.
Stir in broccoli, cover with well fitting lid and cook over a low heat until broccoli is tender. You may need to add a drop more vermouth if the mix is dry. Cook the pasta at this point and both will be ready at roughly the same time.
Once cooked and ready to serve, stir in the pasta. If the mix is a little dry, add some more olive oil to allow the flavours to coat everything.
You’re looking for a dish that has the pasta nicely coated with very little residue left in the bottom of the pan.

Serve into pasta bowls and sprinkle with pine kernels if you fancy. Goes well with some nice garlic bread.

Note; quantities are approximate. Adjust to suit your own personal tastes.

We love cooking outdoors, to make good meals if you're not master chef material, start off with a few meal kits.
Visit Waitrose and get in a few of the 'just add chicken' type things. Usually delicious when. You are away from you home kitchens spice rack

Or you could use get an Omnia hob top oven then you can bake or roast pretty well anything on your hob. With some things you may have to resize to fit, but if will fit inside you can cook it. We were so impressed with ours we became the UK distributors!

I can't help on recipes, but Sally cooks a lot of stuff before hand, like curries and ragus and vacuum seals it into bags that she then lays flat and freezes. They then don't take up much room in the camper freezer and just need to be reheated at the campsite.
